The Independent is a casual restaurant and bar found at Puffing Billy\u2019s last stop- Gembrook. It\u2019s a food hub- with menus designed by Argentinian chef- Mauro Callegari. Produce is sourced as local as possible, for guests to enjoy a seasonal sharing menu. Mauro\u2019s dishes are influenced by his upbringing in Argentina, and passion for Spanish, Italian, Creole and North African flavours. The Independent offers a la carte dining + set menu options for lunch and dinner. Open from 5.30pm Wednesdays and Thursdays, and from 12pm till late Friday to Sunday.
